2 bundles (⅔ package) KoyoⓇ Organic Soba Pasta
¼ cup tahini
2 tablespoons rice vinegar
2 tablespoons sriracha
1 cup shredded red cabbage
1 carrot, cut into matchsticks
1 cup yellow cherry tomatoes, halved
½ red bell pepper, diced
1 avocado, pitted and thinly sliced
½ red onion, thinly sliced
Cilantro, for serving
- Cook noodles according to package directions.
- While noodles cook, in a medium bowl whisk together tahini, vinegar, and sriracha.
- Drain noodles well and immediately toss in tahini sauce, adding a little warm water if needed to achieve a creamy texture.
- Divide noodles between bowls and top with cabbage, carrot, tomatoes, bell pepper, avocado, and onion. Garnish with cilantro leaves.
