Lunch with crunch!
⅓ cup preferred vegetable oil
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon lime juice
1 tablespoon honey
1 tablespoon toasted sesame seeds
2 teaspoons toasted sesame oil
1” fresh ginger, peeled and minced or grated
1 garlic clove, minced or grated
¼ teaspoon black pepper
4 cups finely shredded Napa cabbage
1 large carrot, cut into matchsticks
½ red bell pepper, seeded and very thinly sliced
1 cup sugar snap peas, thinly sliced on the diagonal
½ cup very finely shredded red cabbage
4 green onions, thinly sliced

1. In a jar with a tight-fitting lid combine oil, soy sauce, vinegar, lime juice, honey, sesame
seeds, sesame oil, ginger, garlic, and pepper. Shake vigorously to combine.
2. In a large bowl toss together Napa cabbage, carrot, pepper, peas, red cabbage, and
green onion. Add dressing to taste and toss to coat vegetables.
3. Divide salad between bowls and scatter crackers on top.
